Pasteis de frango e legumes
Eu tinha 2 peitos de frango esquecidos e abandonados no meu congelador. Lembrei-me desta receita da revista do Pingo Doce deste mês. A receita original leva outro recheio, mas eu fiz com o que tinha em casa e  posso dizer que foi um sucesso, pois este foi o único que sobrou, mas depressa foi devorado pelo meu filho ao jantar.

I had 2 chicken breasts forgotten and abandoned in my freezer. I remembered this recipe that I saw in a magazine this month. The original recipe has another filling, but I did with what I had at home and I can say it was a success, because this was the only one left, but was quickly devoured by my son for dinner.


Ingredientes:

Para a massa
2dl de água
1 colher de chá de sal
1 tira de casca de limão
200g de farinha de trigo
50g de sêmea de trigo Pingo Doce
1 colher de sobremesa de tomilho seco
3 colheres de sopa de azeite
1 ovo
sementes de sésamo e de girassol

Recheio:
2 peitos de frango cozidos e desfiados
1/2 beringela
1 cenoura ralada
1 copo de espinafres descongelados
1 cebola pequena
2 colheres de sopa de azeite
sal qb
1 colher de sopa de farinha
1/2dl de leite magro
pimenta e noz moscada qb


  • Começa-se por fazer a massa. Leva-se a água ao lume com o sal e a casca de limão. Mistura-se a farinha com o tomilho numa tigela funda. Quando a água estiver a ferver, retira-se a casca de limão, junta-se o azeite e deita-se sobre a farinha. Mexe-se rapidamente com uma colher de pau até ficar tudo ligado. Deita-se numa bancada enfarinhada e amassa-se até se obter uma massa maleável. Faz-se uma bola e deixa-se repousar durante 30 minutos.
  • Começa-se então a preparar o recheio. Pica-se a cebola e leva-se ao lume numa frigideira com o azeite. Adiciona-se a beringela descascada, aos cubos e também a cenoura finamente ralada. Cozinha-se até os legumes amolecerem. Junta-se então o frango e os espinafres, tempera-se e mistura-se bem. Adiciona-se a farinha, mistura-se e rega-se com o leite. Deixa-se engrossar e retira-se do lume. Deixa-se arrefecer um pouco.
  • Estende-se a massa e procede-se como nos rissois. Coloca-se o recheio na massa, dobra-se a massa de modo a cobrir o recheio e corta-se com um copo. Colocam-se os pasteis num tabuleiro forrado com papel vegetal, pincelam-se com o ovo e polvilham-se com as sementes para decorar. Leva-se ao forno a 180ºC durante 25 minutos ou até a massa ficar dourada nos rebordos.
  • Serve-se com uma salada verde.

Ingredients:

For the dough
2dl water
1 teaspoon of salt
1 strip of lemon peel
200g plain flour
50g wheat bran Pingo Doce
1 tablespoon dried thyme
3 tablespoons olive oil
1 egg
sesame seeds and sunflower

Filling:
2 chicken breasts cooked and shredded
1/2 eggplant
1 carrot, grated
1 cup thawed spinach
1 small onion
2 tablespoons olive oil
salt to taste
1 tablespoon of flour
1/2dl skimmed milk
pepper and nutmeg to taste

  • Begin by making the dough. Take the water to a boil with the salt and lemon peel. Mix the flour with the thyme in a deep bowl. When water is boiling, remove up the lemon peel, add the olive oil and pour over the flour. Stir rapidly with a wooden spoon. Pour into a floured counter top and knead until the dough is pliable. Form a ball and let it rest for 30 minutes.
  • Then begin to prepare the filling. Chop the onion and take it to heat in a pan with olive oil. Add to eggplant, peeled, cubed and also finely grated carrot. Cook until the vegetables soften. Add the chicken and spinach, season and mix well. Add the flour, mix and drizzle with milk. Allow to thicken and remove from heat. Allow to cool slightly.
  • Stretch the dough and place the stuffing in the dough, fold the dough to cover the filling and cut with a glass. Place the pastry on a baking sheet lined with parchment paper, brush with egg and sprinkle with seeds for garnish. Take it to the oven at 180°C for 25 minutes or until dough is golden on edges.
  • Serve with a green salad.

A minha filha não é criança que goste muito de sobremesas. Aliás, dá para contar pelos dedos de uma mão, o número de sobremesas que ela gosta. Esta é uma delas. Adora esta mousse, e já é quase uma tradição cá em casa, fazer esta sobremesa no Natal e no Ano Novo.

Ingredientes:

400g de frutos vermelhos congelados
sumo de 1/2 limão
1 lata de leite condensado
4 folhas de gelatina
2 dl de natas

  • Descongelar os frutos vermelhos, reduzir a puré com a varinha mágica e passar por um passador para eliminar todas sementes.
  • Deitar o puré numa tigela, adicionar o sumo de limão e o leite condensado e mexer. Reservar.
  • Demolhar as folhas da gelatina em água fria. Escorrer e derreter num tacho quente, sem deixar ferver. Junta-se à mistura dos frutos vermelhos.
  • Batem-se as natas em chantilly (sem açúcar) e envolve-se delicadamente na mistura anterior. Levar ao frio para solidificar e decorar a gosto.

Ingredients:

400g of frozen red berries
juice of 1 / 2 lemon
1 can sweetened condensed milk
4 leaves of gelatin
2 dl of cream

  • Thaw the berries, reduce to puree with hand blender and pass through a sieve to remove all seeds.
  • Pour the puree into a bowl, add the lemon juice and condensed milk and stir. Reserve.
  • Soak the gelatin leaves in cold water. Drain and melt in a hot pan, without boiling. Add it to the mix of red berries.
  • Beat in whipped cream (add no sugar) and add it gently to the mixture. Take it to the refrigerator to solidify and decorate to taste.

Cá em casa adoramos este arroz e é tão fácil de fazer. Fica uma delícia!

We love this rice and this is so easy to do. It is a delight!


Ingredientes:

1 frango do campo com miúdos e sangue
arroz
1 molho de salsa
1 dente de alho
1 cebola
azeite
1 copo de vinho branco
sal e pimenta
1 folha de louro

Picam-se a cebola e o alho e levam-se ao lume com o azeite e o louro, numa panela grande.
Corta-se o frango em pedaços, retira-se a pele do frango e junta-se à panela. Deixa-se o frango e os miúdos fritar um pouco até alourar de ambos os lados. Refresca-se com o vinho e deixa-se o frango cozinhar durante uns minutos.
Junta-se o arroz e envolve-se no molho. Cobre-se com água a ferver. Tempera-se com sal e pimenta e também com a salsa picada. Tapa-se a panela e deixa-se cozer. Se for preciso, adicionar um pouco mais de água a ferver. Quando o arroz estiver quase cozido, junta-se o sangue do frango e deixa-se cozinhar durante pelo menos 4 minutos. 
Servir com uma salada verde.


Ingredients:

olive oil
1 cup white wine
Salt and pepper
1 bay leaf


Finely chop the onion and garlic and add it with olive oil and bay leaf in a large saucepan.
Cut the chicken into pieces, remove the chicken skin and add it to the pan. Let the chicken and the giblets fry until golden on both sides. Refresh with wine and let the chicken cook for a few minutes.
Mix in rice and mix it in the sauce. Cover with boiling water. Season with salt and pepper and also with the chopped parsley. Cover up the pan and let it cook. If necessary, add a little more boiling water. When the rice is almost cooked, add the blood of the chicken and let it cook for at least 4 minutes.
Serve with a green salad.

Quando vou às compras, adoro espreitar todas as prateleiras à procura de novidades e de produtos mais saudáveis, para experimentar receitas novas. Foi o que aconteceu esta semana no Pingo Doce. Têm agora à venda pacotes de 1 kg de farinha de milho integral. Num dos lados do pacote trás a receita da broa de milho, e foi assim que um pacote veio comigo para casa e eu fiz esta broa deliciosa.

When I go shopping, I love peeking all the shelves in search of new and healthier products, to try new recipes. It happened this week in Pingo Doce. They now have to sell packages of 1 kg of whole corn flour. On one side of the package there's the recipe for corn bread, and that's how a package came home with me and I made ​​this delicious bread.


Ingredientes:


500g de farinha de milho integral
200g de farinha de trigo
450ml de água a ferver
20ml de água morna
12g de fermento fresco
9 gramas de sal


Numa tigela grande colocar o fermento e mexer junto com a água até este derreter. Juntar a farinha de milho, o sal e a água a ferver e mexer com uma colher ou então usar uma batedeira para não nos queimarmos. Depois da água absorvida, juntar a farinha de trigo e amassar até obter uma massa espessa. Se for preciso, juntar mais farinha de trigo. (Atenção que esta massa parece que fica mole em relação a outras massas de pão, mas é mesmo assim.)
Deixar levedar durante hora e meia. Findo este tempo, amassar rapidamente a massa, formar uma bola, colocar num tabuleiro e achatar ligeiramente. Deixar repousar durante 5 minutos e levar ao forno a 230ºC durante 1 hora.


Ingredients:


500g of whole corn flour
200g plain flour
450ml of boiling water
20ml of warm water
12g fresh yeast
9 grams of salt


In a large bowl put the yeast and mix with the water until it melts. Add the cornmeal, salt and boiling water and stir with a spoon or use a mixer. After the water absorbed, add the flour and knead until the dough is thick. If necessary, add more flour. (Note that this dough is softer compared to other doughs)
Let it rest for an hour and half. After this time, quickly knead the dough, form a ball, place on a baking sheet and flatten slightly. Let it stand for 5 minutes and bake at 230 ° C for 1 hour.

O meu marido adora este bolinho típico da zona de Alter-do-Chão. É deliciosa com um maravilhoso copo de leite. Acabou num instante às mãos do meu marido e do meu filho, que se deliciaram com esta boleima.

Ingredientes:


500g de farinha de trigo
200g de açúcar amarelo
3 ovos
1,5 dl de azeite
2 dl de café instantâneo
raspa de 1 limão
1 colher de café de canela
1 colher de fermento em pó
açúcar e canela para polvilhar


Numa tigela larga, misturam-se todos os ingredientes até se obter uma mistura homogénea sem grumos.
Verte-se para um tabuleiro rectangular, untado e enfarinhado, e polvilha-se com açúcar e canela. Vai ao forno a 180ºC durante +/- 30 minutos.



Ingredients:


500g  flour
200g light brown sugar
3 eggs
1,5 dl of olive oil
2 dl of instant coffee
zest of 1 lemon
1 teaspoon cinnamon
1 tablespoon baking powder
cinnamon and sugar for sprinkling


In a large bowl, mix all ingredients until a homogeneous mixture with no lumps.
Pour into a rectangular pan, greased and floured, and sprinkle with sugar and cinnamon. Take it to the oven at 180 ° C for +/- 30 minutes.

Há uns dias, ia eu fazer uma sopinha para o jantar, como faço habitualmente, quando o meu filhote me pediu para fazer uma bola no lugar da sopa. Como não tinha muito tempo, procurei uma receita que não precisasse de levedar. Foi quando encontrei no blog da Moira esta receita. Ficou deliciosa e desapareceu rapidamente! Além disso, soube tão bem ouvir o meu filho a dizer que esta tinha sido a melhor bola que eu já fiz e vê-lo a comer com tanta satisfação.

A few days ago, I was going to make a soup for dinner, as I usually make, when I was asked by my son to make a ham cake instead of soup. Since I didn't have much time I searched a recipe that fast to make. It was when I found in Moira's blog this recipe. It was delicious and disappeared quickly! In addition, felt so good to hear my son saying that this was the best ham cake I've ever done and see him eat with so much satisfaction.



Ingredientes:

400g de farinha
1 colher de sopa de fermento em pó
1,5 dl de azeite
4 ovos batidos
1 dl de leite (eu pus um pouco mais)
1 fatia de fiambre com 1 cm de grossura cortado aos cubos
50g de chouriço de carne
100g de presunto
sal qb

Colocar a farinha e o fermento numa tigela e fazer um buraco no meio. Adicionar os ovos, o sal e o azeite e misturar até ficar tudo bem ligado. Juntar o leite até a massa deixar de ser demasiado espessa.
Por fim, juntar as carnes, envolver e levar ao forno a 180ºC numa forma untada e enfarinhada durante 20 minutos.

Ingredients:

1,5 dl of olive oil
4 eggs, beaten
1 dl milk (I added a little more)
1 slice of ham with 1-inch thick cut into cubes
50g chorizo in cubes
100g prosciutto
salt to taste

Hoje venho "exibir" a minha grande vitória na cozinha. Pasteis de bacalhau foi sempre uma comida que, simplesmente, nunca me saía bem. NUNCA!  Assim que os punha no óleo, desfaziam-se em mil bocadinhos o que me irritava imenso. Mas agora já percebi exactamente como devem ser feitos e esqueci todas as receitas que já vi e faço-os a olho. O meu "crítico" de pasteis de bacalhau, o meu querido marido, gostou dos meus pasteis de bacalhau, o que me deixou imensamente feliz. :)

Ingredientes:

360g de batata cozida e esmagada
300g de bacalhau demolhado, cozido e bem desfiado
1/4 de cebola picada
1 dente de alho picado
1 molho de salsa picada
1 ovo
noz moscada
pimenta
sal
óleo

Misturar bem a batata esmagada com o bacalhau. Juntar a cebola picada, o alho e a salsa e misturar bem. Temperar a gosto e juntar o ovo. A mistura deve ficar espessa, mas se for necessário adicionar mais um ovo. Tudo depende da batata, e da forma como absorve o ovo.
Com duas colheres de sobremesa moldar os pasteis e fritar em óleo quente até ficarem douradinhos.

Ingredients:

360g of boiled potatoes and mashed
300g of cod soaked, cooked and shredded
1/4 chopped onion
1 clove garlic, minced
1 bunch parsley, chopped
1 egg
nutmeg
pepper
salt
oil

Mix well the mashed potato and the shredded cod. Add the chopped onion, garlic and parsley and mix well. Season to taste and add the egg. The mixture should be thick, but if you need to, add another egg. Everything depends on the potato, and the way it absorbs the egg.
With two spoons to shape the cakes and fry in hot oil until they are golden.

Há uns meses atrás comprei uma máquina de fazer donuts. A minha filhota adora estes donuts porque ela não é grande fã de fritos. São muito simples de fazer, rápidos e as crianças adoram. 

A few months ago I bought a donut-making machine. My little girl loves these donuts because she's not a big fan of fried food. They are very simple to make, quick and kids love it.




Ingredientes:
1 copo de farinha
1/2 copo de açúcar
1 colher de sobremesa de fermento em pó
1 ovo
1/2 copo de leite
4 colheres de sopa de becel líquida
1 colher de chá de extrato de baunilha
raspa de 1 laranja

para a cobertura:
2 colheres de sopa de chocolate
2 colheres de sopa de manteiga amolecida
1 copo de açúcar em pó
1 colher de sopa de água a ferver
1 colher de chá de extrato de baunilha
confetis para decoração

Ligar a máquina de donuts. Misturar todos os ingredientes e bater com uma vara de arames até a mistura ficar macia e cremosa. Eu deito sempre o spray da Espiga nas formas da máquina e deito a massa. Deixa-se cozer durante uns minutos e retira-se com um palito (por serem tão pequenos, é mais fácil espetar o donut com um palito para o retirar da máquina).
Misturar os ingredientes da cobertura e bater bem até ficar uma pasta cremosa.
Cobrir os donuts com a cobertura e decorar com os confetis.
Comer com um belo copo de leite gelado! :)

Ingredients:
1 cup flour
1/2 cup sugar
1 tbsp baking powder
1 egg
1/2 cup milk
1/2 tsp vanilla
4 tbsp liquid margarine
zest of 1 orange

Topping:

2 tbsp of chocolate
2 tbsp butter, softened
1 cup powdered sugar
1 tbsp boiling water
1 tsp vanilla extract
confetti for decoration


Turn the donuts' machine. Mix all ingredients and beat until the mixture is smooth and creamy. I always spray the machine and add the dough. Let it cook for a few minutes and remove with a toothpick (for being so small, it is easier to stick the donut with a toothpick to remove it from the machine).
For the topping, mix the ingredients and beat well until you get a creamy paste.
Cover the donuts and decorate with confetti.
Eat with a nice glass of cold milk! :)
