Pudim de coco / Coconut custard
Um dia destes, depois de fazer comida tailandesa, sobrou-me uma grande porção de creme de coco. Sem saber o que fazer àquele resto que sorria para mim no frigorífico decidi fazer este pudim com o que tinha no frigorífico e na dispensa.
Apesar de ter sido feito de improviso, ficou delicioso, embora um bocadinho doce demais para o meu gosto. Contudo é um pudim a repetir, pois o meu filho e a minha filha adoraram :) 

One day, after making Thai food, I found myself with a large portion of coconut cream. Not knowing what else to do to that, I decided to make this pudding with what I had in the fridge and in the pantry.
Although it was done impromptu, it was delicious, though a little too sweet for my taste. However I will be making this pudding again, because my son and my daughter loved it :)



Ingredientes:
1 lata de leite condensado
4 ovos
 +/- 150g de creme de coco Koala
1 medida (lata de creme de coco) de leite
caramelo

Numa tigela bater todos os ingredientes (excepto o caramelo). Untar uma forma de pudim com o caramelo e deitar a mistura de ovos, tapar a forma e levar ao lume numa panela de pressão durante 13 min (contar o tempo depois da panela ganhar pressão).
Desenformar quando estiver morno.
Em alternativa podem-se usar ramequins e cozer em banho maria.


Ingredients:
1 can of condensed milk
4 eggs
  + / - 150g coconut cream Koala
1 measure (tin of coconut cream) of milk
caramel

In a bowl beat all ingredients (except caramel). Grease a pan with the caramel and pour the egg mixture, cover the custard pan and bring to boil in a pressure cooker for 13 min (counting time after gainning pressure).
Unmold when warm.
Alternatively one can use ramekins and bake in a water bath.

Não há muitas sobremesas que a minha filha goste. Faço crumble várias vezes, geralmente de maçã e/ou pera, e a minha filha limita-se a comer a crosta. Quando vi esta receita na TV&Culinária deste mês, decidi que a tinha de fazer com as bananas que estavam a escurecer na minha fruteira.
A receita original pede nozes, mas como a minha piolhinha adora avelãs, fiz a substituição.
Este crumble é mesmo para quem gosta apenas da crosta, pois a banana transforma-se num leve creme doce. Fica tão estaladiço e delicioso!

There aren't many desserts that my daughter like. I make crumble several times, usually apple and / or pear, and my daughter just eats the crust. When I saw this recipe in Cooking & TV this month, I decided that had to do with the bananas that were getting brown in my fruit bowl.
The original recipe calls for walnuts, but my little girl loves hazelnuts, so I made the replacement.
This crumble is really only for those who only like the crust because the banana turns into a light custard. It is so crispy and delicious!


Ingredientes:
2 bananas bem maduras
1 limão (eu usei 2 tangerinas)
100g de açúcar amarelo
200g de farinha
50g de chocolate em pó
80g de manteiga fria (eu usei 120g)
100g de miolo de noz (eu usei avelãs)

Descascar as bananas e cortar em rodelas. Regar com o sumo do limão (ou tangerinas) e dispor no fundo de uma tarteira.
À parte misturar a farinha, o açúcar, o chocolate e a manteiga, até se obter uma massa areada. Adiciona-se o miolo de avelã e cobrem-se as rodelas de banana.
Leva-se ao forno a 190ºC durante cerca de 20 minutos. Comer quente com chantili.



Ingredients:
2 very ripe bananas
1 lemon (I used 2 tangerines)
100g light brown sugar
200g flour
50g cocoa powder
80g cold butter (I used 120g)
100g walnuts (I used hazelnuts)

Peel the bananas and cut into slices. Sprinkle with lemon juice (or tangerines) and place at the bottom of a baking dish.
In a bowl mix flour, sugar, chocolate and butter until you get a crumble. Add the chopped hazelnut and cover up the banana slices.
Bake at 190 ° C for about 20 minutes. Eat warm with whipped cream.

Deparei-me com esta receita há cerca de 1 mês e decidi fazê-la para comemorar o dia dos namorados. A receita é do Jamie Oliver e é deliciosa. São tão fáceis de fazer e têm um sabor espectacular. É mais uma receita para a minha colecção de receitas de panquecas. Sim, colecção de receitas de panquecas, porque é o pequeno almoço preferido aqui de casa.

I came across this recipe about 1 month ago and decided to make it to celebrate Valentine's Day. The recipe is from Jamie Oliver and is delicious. They are so easy to make and they taste spectacular. It's a recipe for my recipe collection of pancakes. Yes, pancake recipe collection, because it is the preferred breakfast here at home.


Ingredientes:

1 ovo
1 copo de farinha com fermento
1 colher de chá de fermento em pó, opcional
1 copo de leite
8 colheres de sopa de coco ralado
20 g de manteiga
uma romã

Partir um ovo numa tigela grande. Encher um copo com farinha e colocar na tigela. Juntar o fermento. Encher o mesmo copo com leite e acrescentar uma pitada pequena de sal marinho. Misturar tudo até ficar homogéneo. Juntar as 8 colheres de sopa de coco ralado. Cubra a tigela com película aderente e coloque de lado.

Enquanto isso, cortar uma romã ao meio e retirar as sementes. Usar uma colher de pau para tocar na parte de trás da romã assim as sementes caem dentro da tigela. Fazer isso com ambas as metades até que todas as sementes se libertem.

Colocar uma frigideira em fogo médio. Untar a frigideira com a manteiga e fritar as panquecas. Cozinhar as panquecas por 1-2 minutos, até que pequenas bolhas se formem. Usando uma espátula resistente ao calor,  virar as panquecas. Cozinhar as panquecas por um minuto.

Transfira as panquecas para um prato e cubra com papel alumínio para manter aquecido. Repetir até se esgotar a massa.

Para servir, cobrir as panquecas de coco com uma colher de iogurte (não usei iogurte, usei xarope de ácer) e algumas sementes de romã.




Ingredients:

1 egg
1 cup self-raising flour
1 teaspoon baking powder, optional
1 cup milk
8 tablespoons desiccated coconut
20 g butter
1 pomegranate


Crack an egg into a large mixing bowl. Fill a cup with flour, then add that to the bowl. Toss in the baking powder, if you have it. Fill the same cup with milk and add that too, with a tiny pinch of sea salt. Use a whisk to mix everything till smooth. Mix in 8 tablespoons of desiccated coconut. Cover your bowl in clingfilm and put to one side.

Meanwhile, cut a pomegranate in half. Get a mixing bowl and hold the pomegranate, seed-side down, above the bowl. Use a wooden spoon to tap the back of the pomegranate so the seeds fall into the bowl. Do this with both sides until all the seeds are in the bowl. 

Put a large frying pan on a medium heat. Grease the pan with butter and pour some batter. Once it starts to bubble, carefully flip them over. Cook the pancakes for another minute or so, till golden on both sides. 

When they are done, transfer them to a plate and cover with foil to keep warm. Carefully wipe the pan clean with kitchen paper, then add the remaining butter and keep going until all the batter is used up. To serve, top your coconut pancakes with a spoonful of yoghurt (I used maple syrup) and some pomegranate seeds.

É com muita alegria que vejo a página do Facebook a ultrapassar o milhar de fãs! Obrigado a todos os que seguem as minhas aventuras na cozinha!
É claro que tem de haver bolo para comemorar esta meta. O bolo mais comido aqui em casa é este, um pão de ló delicioso e tão simples de fazer! Agrada a todos e de cada vez que faço aromatizo de forma diferente. As opção são várias e eu geralmente uso a raspa de limão (a minha favorita), baunilha, chocolate, raspa de laranja, raspa de tangerina e água de flor de laranjeira. Também já juntei pepitas de chocolate, pinhões, passas, sementes de papoila e nozes. Enfim, o truque é usar a imaginação!

Pleases each and every time, and each time I make it  I give it a different flavor. The options are many and I usually use lemon zest (my favorite), vanilla, chocolate, orange zest, tangerine zest and orange flower water. I have also added chocolate chips, pine nuts, raisins, walnuts and poppy seeds. Anyway, the trick is to use your imagination!



Ingredientes:
ovos
o peso dos ovos em açúcar
1/2 do peso dos ovos em farinha
aroma a gosto (eu usei raspa de limão)

Pré-aquecer o forno a 180ºC.
Separar as gemas das claras. Bater bem as gemas com o açúcar. Bater as claras em castelo. Adicionar a farinha à gemada, alternando com as claras. Não mexer muito a massa, apenas o suficiente para misturar a farinha, sem desfazer as claras.
Untar uma forma com manteiga e polvilhar com pão ralado. Deitar a massa e levar ao forno até o bolo estar dourado e o palito sair seco.
Polvilhar com açúcar em pó e decorar a gosto.



Ingredients:

eggs weight in sugar
1/2 the weight of eggs into flour
flavor to taste (I used lemon zest)

Preheat oven to 180 º C.
Separate the yolks from the whites. Beat the egg yolks with the sugar. Whisk the egg whites. Add the flour to the yolk and sugar mix, alternating with the egg whites. Do not overmix the batter, just enough to mix the flour.
Grease a pan with butter and sprinkle with breadcrumbs. Pour the batter and bake until the cake is golden and the toothpick comes out dry.
Sprinkle with powdered sugar and decorate to taste.

Numa das minhas visitas a um hipermercado conhecido, encontrei estas courgettes redondas. São ideais para rechear e ficam lindas no prato. Pode-se fazer mais ou menos saudável. Eu optei pelo menos saudável ao adicionar o bacon, mas.... o bacon dá um sabor tão bom à comida! :)

On one of my visits to a known supermarket, I found these round courgettes. They are ideal for stuffing and are beautiful on the plate. You can make it more or less healthy. I opted for the less healthy way by adding the bacon, but .... bacon gives a delicious flavor to food! :)


Ingredientes:
6 courgettes redondas
1 cenoura
7 cogumelos shitake
1 alho francês
1/2 lata de milho
salsa
bacon
mistura de 3 queijos
oregãos
sal e pimenta qb
2 colheres de sopa de azeite

Lavar as courgettes, cortar o topo e com uma colher de sopa retirar o miolo. De seguida cortar o miolo da courgette, ralar a cenoura, laminar os cogumelos, cortar o alho francês em rodelas finas e picar a salsa.
Aquecer o wook com o azeite e saltear rapidamente o alho francês. Juntar a courgette e a cenoura e deixar cozinhar durante uns minutos. Após esse tempo juntar os cogumelos, o bacon e o milho. Temperar e deixar cozinhar durante mais uns minutos.
Juntar a sala, rechear as courgettes com os legumes e polvilhar com o queijo ralado e os oregãos.
Levar ao forno até o queijo derreter. Servir de imediato.

Nota: Eu utilizei apenas metade do miolo das courgettes e congelei o resto para colocar em sopas.



Ingredients:
6 round courgettes
1 carrot
7 shitake mushrooms
1 leek
1/2 can corn
parsley
bacon
3 cheese mix
oregano
salt and pepper
2 tablespoons olive oil

Wash the courgettes, cut the top and with a tablespoon remove the inside. Then cut the inside of the courgette into slices, grate the carrot, cut the  mushrooms into strips, cut the leek into thin slices and chop the parsley.
Heat the olive oil in a wook and quickly sauté the leek. Add the courgette and the carrot and cook for a few minutes. After that time add the mushrooms, bacon in strips and corn. Season and cook for a few more minutes.
Add the chopped parsley, stuff the courgettes with the vegetables and sprinkle with the grated cheese and oregano.
Bake until cheese is melted. Serve immediately.

Note: I only used half of the inside of the courgette and freezed the rest to make soup.

Com a avaria do meu computador e os testes do meu filho, tenho andado mais distante do blog. Mas a cozinha não parou e tenho feito muitas iguarias deliciosas. Exemplo disso é este prato tailandês. Ligeiramente picante, com a amêndoa e os rebentos de soja estaladiços e com sabor delicioso que o molho de peixe dá a este prato.
Tão simples e rápido de fazer, não há razão para não fazer. Podem-se juntar mais legumes a gosto, como a couve pak choi, cenoura e rebentos de bambu. Usem a vossa imaginação e deliciem-se!

Ingredientes (para 2 pessoas):
1 peito de frango
1 alho francês cortado em rodelas finas
cogumelos pleurotus
1 molho de rebentos de soja
1/4 de pimento vermelho
1 colher de sopa de molho de peixe
1 colher de sopa de molho de soja
1 colher de sweet chilli sauce
1 colher de sopa de creme de coco
sumo de 1/2 lima
1 colher de sopa de azeite
coentros
amêndoa picada torrada

Aquecer o wook. Deitar o azeite e o alho francês. Juntar o peito de frango cortado em tiras pequenas. Quando o frango estiver cozinhado juntar os cogumelos, o pimento cortado em tiras e os rebentos de soja e misturar. Temperar com o molho de peixe, o molho de soja, o sweet chilli sauce e o creme de coco. Juntar o sumo de lima, e os coentros picados. Polvilhar com a amêndoa e servir.




Ingredients (for 2):
1 chicken breast
1 leek cut into thin slices
mushrooms pleurotus
1 sauce soybeans
1/4 red pepper
1 tablespoon of fish sauce
1 tablespoon soy sauce
1 tablespoon sweet chilli sauce
1 tablespoon of coconut cream
juice of 1/2 lime
coriander
toasted chopped almond

Heat the wook. Pour the olive oil and the leek. Add the chicken breast cut into small strips. When the chicken is cooked add the mushrooms, the red pepper cut into strips and bean sprouts and mix. Season with fish sauce, soy sauce, sweet chilli sauce and the coconut cream. Add lime juice and chopped coriander. Sprinkle with the almod and serve.
