Torta de maçã e canela / Apple and cinnamon roulade
Hoje, quando abri o Facebook, deparei-me com uma receita fora do normal, mas com um aspecto delicioso! O blog é o conhecido "Receitinhas da Belinha Gulosa". E a receita em questão é a Torta de Nêsperas. Se ainda não conhecem o blog, deviam passar por lá e navegar pelas imensas receitas deliciosas e originais que a Isabel cozinha.
Mas acontece que eu não tinha nêsperas, mas tinha bastantes maçãs! Daí até fazer esta torta, foi um instante! Fiz algumas alterações à receita original, que muito agradou aos gulosos cá de casa.
Já ando a fazer planos de fazer com manga da próxima vez. Espero que resulte!

And the recipe in question is the Loquat Roulade. If you do not know the blog, you should go there and browse through several delicious and original recipes that Isabel makes. 
But it turns out that I had not loquats, but had plenty of apples! I made some changes to the original recipe, which greatly pleased the sweet tooth of my family. 
I'm already making plans to make this roulade with mango next time. I hope that works!




TORTA DE MAÇÃ E CANELA

Ingredientes
300g de maçãs descascadas
4 ovos
200g de açúcar
100g de farinha para bolos
25g de farinha Maizena
sumo de 1/2 laranja
raspa de 1 laranja
1 colher de sopa de margarina derretida
1 colher de café de canela
2 colheres de sopa de geleia de marmelo
Açúcar e canela para polvilhar

Colocar as maçãs, o sumo de laranja, a raspa da laranja e os ovos no liquidificador e bater até ficar um creme suave.
Numa tigela colocar as farinhas, o açúcar, a canela e juntar o creme de maçã. Misturar até não haver grumos e juntar a margarina derretida.

Deitar a mistura para um tabuleiro untado e forrado com papel vegetal e novaente untado. Levar ao forno pré-aquecido a 180ºC durante cerca de 20 minutos.

Entretanto preparar um pano limpo e polvilha-lo com açúcar e canela. Aquecer a geleia de marmelo no microondas para ficar líquida. Virar o tabuleiro com cuidado para cima do pano e pincelar o interior da torta com a geleia de marmelo. Enrolar com cuidado e deixar repousar uns minutos. Transferir com cuidado para uma travessa e polvilhar com mais açúcar e canela.




APPLE AND CINNAMON ROULADE

Ingredients
300g peeled apples
4 eggs
200g sugar
100g cake flour
25g of cornstarch
juice 1/2 orange
zest of 1 orange
1 tablespoon melted margarine
1 teaspoon of cinnamon
2 tablespoons quince jelly
Sugar and cinnamon for sprinkling

Place the apples, orange juice, orange zest and eggs in a blender and beat until you get a smooth cream.
In a bowl place the flour, sugar, cinnamon and add the apple mixture. Mix until there's no lumps and add the melted margarine .

Pour the mixture into a greased and lined baking sheet. Bake in a preheated oven at 180°C for about 20 minutes.

Meanwhile prepare a clean cloth and sprinkle it with sugar and cinnamon. Warm the quince jelly in the microwave to turn liquid. Flip the tray gently onto the cloth and swab the inside of the roulade with quince jelly. Carefully roll and let stand for a few minutes. Carefully transfer to a serving dish and sprinkle with more sugar and cinnamon.

A pedido dos rebentos, trouxe do supermercado uma língua de vaca. Geralmente faço-a de fricassé ou guisada com tomate. Desta vez apeteceu-me variar e lembrei-me da minha velha panela de barro. Não é costume fazer língua na panela de barro, mas a comida feita no barro fica com um sabor diferente por isso valia a pena experimentar.
Foi uma experiência a repetir, pois não sobrou nada! O aroma inebriante fazia crescer água na boca e o sabor delicioso conquistou todos cá em casa!
Para além desta variação, também fiz gnocchi de espinafres para acompanhar, mas essa receita virá noutro post. 

At the request of the kids, I brought from the supermarket a beefs tongue. I usually beefs tongue fricassee or stew with tomato. This time I felt like changing the way I cook it and I remembered my old terracotta pan. It is not customary to cook the beefs tongue this way, but the food gets a different flavor so it was worth experiencing. 
It was an experience to repeat, because there's nothing left! The heady aroma was mouth watering and the delicious taste conquered all here at home!
Besides this variation, I also made spinach gnocchi as a side dish, but this recipe will come in another post.





LÍNGUA DE VACA EM PANELA DE BARRO

Ingredientes:
1 língua de vaca
1 cebola inteira
1 cenoura inteira
1/2 chouriço
6 fatias de bacon
1 cebola grande picada grosseiramente
2 cenouras cortadas em cubos
1 molho de salsa
3 folhas de louro
1 raminho de tomilho fresco
1 lata pequena de tomate
2 copos de vinho branco
1 colher de sopa de colorau
1 copo de vinho tinto
3 colheres de sopa de azeite
1/2 chávena de caldo de galinha caseiro
sal e pimenta a gosto

Começa-se por se dar um "escaldão" à língua de vaca, numa panela de pressão com água temperada com sal e pimenta, a cebola e a cenoura inteiras e 1 folha de louro, durante 20 a 30 minutos. Após esse tempo retira-se a pele da língua e retiram-se também quaisquer pedaços de gordura que possa ter e corta-se em fatias de 2 centímetros.
Colocam-se as fatias de língua num tabuleiro e temperam-se com os vinhos, o colorau, a salsa picada, o sal e pimenta, o azeite, o louro e o tomilho. Deixa-se marinar 2 horas no frigorífico.
Findo este tempo, coloca-se no fundo da panela de barro metade da cebola picada, 1 cenoura aos cubos e a língua. De seguida, cobre-se com a restante cebola, cenoura, o chouriço às rodelas, o bacon cortado em pedaços e o tomate esmagado. Rega-se com a marinada e junta-se o caldo de galinha caseiro.
Tapa-se a panela e leva-se ao forno a 200ºC durante 1 hora.


BEEF TONGUE IN TERRACOTTA PAN

Ingredients:
1 beef tongue
1 whole onion
1 whole carrot
1/2 chorizo
6 slices of bacon
1 large onion, coarsely chopped
2 diced carrots
1 bunch of parsley
3 bay leaves
1 sprig of fresh thyme
1 small can of tomato
2 cups of white wine
1 tablespoon paprika
1 glass of red wine
3 tablespoons olive oil
1/2 cup homemade chicken broth
salt and pepper to taste

Begin to cook the beef tongue, in a pressure cooker with water, salt, pepper, onion and carrot and 1 whole bay leaf for 20 to 30 minutes. After this time remove the skin and also remove any pieces of fat it may have and cut into 2 cm slices.
Put the beef tongue slices in a tray and season with the 2 wines, paprika, chopped parsley, salt and pepper, olive oil, bay leaf and thyme. Allow to marinate 2 hours in the refrigerator.
After this time, place in bottom of the terracotta pan half the chopped onion, 1 carrot diced and the beef tongue. Then cover with the remaining onion, carrot, sliced ​​chorizo ​, bacon cut into pieces and crushed tomatoes. Add the marinade and the homemade chicken broth.
Cover and put the pan in the oven at 200°C for 1 hour.

Arroz de tamboril / Monkfish rice - Food Revolution Day
Hoje, quando passei pela peixaria para comprar peixe para grelhar, reparei num belo tamboril, muito fresco, que me lembrou logo de um delicioso arroz de tamboril. Não deu para resistir e lá veio este peixe comigo!
O truque para ficar um arroz bem saboroso, é fazermos o nosso próprio caldo de peixe com as espinhas do tamboril, e ervas aromáticas. Com paciência e com os ingredientes certos, obtemos um arroz de tamboril delicioso e aromático.

Esta receita é também a minha contribuição para o Food Revolution Day. Uma receita saudável, bem tradicional do nosso país e muito saborosa. Uma forma deliciosa de comer peixe!



Hoje, I went to the fish market to buy fish to grill, I noticed a beautiful, very fresh monkfish. It reminded me immediately of a delicious monkfish rice. I couldn't resist and I had to bring it home!
The trick to get a very tasty rice, is to do our own fish stock with the bones of the monkfish and herbs. With patience and the right ingredients, we get a delicious and aromatic monkfish rice.

This recipe is my contribution for the Food Revolution Day. A healthy recipe, very traditional in Portugal and very tasty. A delicious way to eat fish!




ARROZ DE TAMBORIL

Ingredientes:

para o caldo de peixe

espinhas do tamboril
caules de coentros
1 cenoura
1 cebola
1 raminho de tomilho
1,5 litros de água
sal e pimenta

para o arroz

2 chávenas de arroz carolino
1 lombo de tamboril arranjado (sem peles nem espinhas)
1/2 chávena de vinho branco
1/4 de pimento vermelho cortado em cubinhos
4 tomates médios maduros, descascados e partidos em cubos
1 colher de sopa de concentrado de tomate
1 cebola média finamente picada
1 dente de alho picado
150g de miolo de camarão
coentros picados
3 colheres de sopa de azeite
sal e pimenta
1 pitada de pimenta caiena
1 folha de louro
caldo de peixe


Procedimento:

Começa-se por se fazer o caldo. Para isso basta colocar todos os ingredientes numa panela e deixar ferver em lume brando durante 30 minutos. Ao longo desse tempo, retirar a espuma que se forma.
Ao fim desse tempo, passar o caldo por um passador e reservar.

Num tacho, aquecer o azeite e refogar a cebola, o alho e a folha de louro até a cebola ficar translúcida. Deitar o tomate e o concentrado de tomate. Cozinhar durante 3 minutos em lume médio.
Juntar o arroz lavado e deixar cozinhar durante 3 minutos, mexendo com frequência. Deitar o vinho e quando este evaporar, junta-se a 4 chávenas de caldo de peixe. Temperar com a pimenta caiena e pimenta preta. Juntar o lombo de tamboril cortado em medalhões, tapar o tacho e deixar cozinhar em lume brando durante 10 minutos.  Ao fim desse tempo, ajustar os temperos, juntar o camarão e tapar a panela, apagando o lume. Deixar repousar durante 5 minutos. Servir, polvilhado com coentros picados.




MONKFISH RICE

Ingredients:

for the fish broth

monkfish bones
coriander stems
1 carrot
1 onion
1 sprig of thyme
1,5 liters of water
salt and pepper

for the rice

2 cups of risotto rice
1 loin of monkfish (without skins and bones )
1/2 cup of white wine
1/4 red pepper diced
4 ripe medium tomatoes, peeled and diced
1 tablespoon of tomato purée
1 medium onion, finely chopped
1 clove garlic, minced
150g of peeled shrimp
chopped coriander
3 tablespoons olive oil
salt and pepper
1 pinch of cayenne pepper
1 bay leaf
fish broth


Begin to make the broth. To do this just put all the ingredients in a pan and boil over low heat for 30 minutes. Throughout this time, remove the foam.
At the end of that time, strain the broth through a sieve and reserve.

In a pan, heat the olive oil and sauté the onion, garlic and bay leaf until the onion is translucent. Pour the tomatoes and tomato purée. Cook for 3 minutes over medium heat .
Add the washed rice and cook for 3 minutes, stirring frequently. Pour the wine and evaporate, then add 4 cups of fish broth. Season with cayenne pepper and black pepper. Add the monkfish loin cut into medallions, cover the pan and simmer over low heat for 10 minutes. At the end of this time, adjust the seasoning, add the shrimp and cover the pot, turning of the heat. Let stand for 5 minutes. Serve, sprinkled with chopped coriander.

Não há nada como um bom bolo de chocolate! Principalmente quando é recheado com um creme delicioso de chocolate e coberto com uma cobertura cremosa também de chocolate. Mas a verdade é que geralmente isto implica muitas calorias, ovos, leite e natas.
E se eu vos disser que para além de não ter ovos nem leite, este bolo é extremamente fofinho, delicioso e se não disserem nada a ninguém, ninguém vai dar por nada. Para além de não ter nem ovos nem leite, este bolo é rico em fibras pois é feito com farinha integral e linhaça.
Mas chega de conversa, o melhor é verem a receita e não se esqueçam de experimentar!

What if I told you that in addition to not having milk or eggs, this cake is extremely fluffy, delicious and if you don't tell anyone, no one will notice. In addition to having neither eggs nor milk, this cake is rich in fiber because it is made with whole wheat flour and flaxseed.

BOLO DE CHOCOLATE VEGETARIANO

Ingredientes:

para o bolo:

1 1/2 chávena de farinha de trigo
1/2 chávena de farinha de trigo integral
1 1/2 chávenas de açúcar amarelo
1 colher de sopa de linhaça moída
5 colheres de sopa de cacau sem açúcar
1 colher de sopa de fermento em pó
1 colher de café de bicarbonato de sódio
1 1/2 chávenas de leite de amêndoa
1/2 chávena de óleo de coco
1 colher de sobremesa de sumo de limão

para o recheio:
100g de chocolate culinária
60ml de natas de soja
2 colheres de sopa de açúcar amarelo

para a cobertura:
3 colheres de sopa de leite de amêndoa
2 colheres de sopa de açúcar amarelo
50g de chocolate de culinária


Procedimento:

Pré-aquecer o forno a 180ºC e untar duas formas redondas, e polvilhar com cacau.
Misturar os ingredientes secos com uma vara de arames, numa tigela funda. Noutra tigela misturar os ingredientes líquidos e juntar aos secos, mexendo até se obter uma mistura homogénea.
Dividir a mistura pelas duas formas de bolo e levar ao forno durante cerca de 20 minutos.

Entretanto, prepara-se o recheio. Num tacho aquecem-se as natas e o açúcar amarelo até começarem a borbulhar. Retira-se do lume e junta-se o chocolate partido. Mexe-se até o chocolate derreter e se obter um creme aveludado. Deixar arrefecer por completo.

Para a cobertura, leva-se ao lume o leite de amêndoa com o açúcar até começar a ferver. Retira-se do lume e junta-se o chocolate partido em pedaços. Mistura-se até o chocolate derreter.

Quando o bolo estiver frio, colocar um dos bolos num prato e barrar com o recheio, que nesta altura deverá estar frio e bastante espesso. Coloca-se o segundo bolo por cima e cobre-se com a cobertura de chocolate. Decorar a gosto.



VEGAN CHOCOLATE CAKE

Ingredients:

for the cake:
1 1/ 2 cup all-purpose flour
1/2 cup of whole wheat flour
1 1/2 cups of brown sugar
1 tablespoon of ground flaxseed
5 tablespoons unsweetened cocoa
1 tablespoon of baking powder
1/4 teaspoon of baking soda
1 1/2 cups of almond milk
1/2 cup of coconut oil
1 tablespoon lemon juice

for the filling:
100g semi-sweet chocolate
60ml soy cream
2 tablespoons brown sugar

for the frosting:
3 tablespoons of almond milk
2 tablespoons brown sugar
50g semi-sweet chocolate


Procedure:

Preheat oven to 180 ºC, grease two round baking pans, and sprinkle with cocoa.
Mix the dry ingredients with a whisk in a deep bowl. In a separate bowl mix the liquid ingredients and add to the dry, stirring to obtain a homogeneous mixture.
Divide the mixture evenly between the two baking pans and bake for about 20 minutes.

Meanwhile, prepare the filling. In a pan heat up the cream and brown sugar until they start to bubble. Remove from heat and add the chopped chocolate. Stir until chocolate is melted and you get a velvety cream. Allow to cool completely.

For the frosting, heat the almond milk with sugar until it starts to boil. Remove from heat and add the chocolate broken into pieces. Mix until the chocolate melts .

When the cake has cooled, place the cake on a plate and spread the filling, which at this point should be cold and quite thick. Place the second cake on top and cover with the chocolate frosting. Decorate to taste.
